Happy Hanukkah! (Well, almost). The first day of Hanukkah falls on Thanksgiving Day this year, which is just a little over two weeks away! This, for the Jews, means twice the deliciousness! For those of you who are not familiar with the Jewish holiday, Hanukkah originated hundreds of thousands of years ago when the Jews were rededicating the Holy Temple in Jerusalem. There was only enough oil left for lighting the menorah (a Jewish candlestick) for one day, but miraculously, the oil lasted for eight days! Hence, we celebrate eight splendid days of Hanukkah by lighting the menorah, eating delicious fried potato pancakes, and gathering with loved ones.
